The lobsters come the day of the bake in pallets before being transferred from a large, refrigerated truck to warehouse coolers. The chilled lobsters are then cooked en masse on giant trays above an open flame with hundreds of lobsters steaming in a thin layer of water under aluminum foil in each round.
